No-bake protein cookie dough slice
Serves: 10
Ingredients
- 1 cup almond flour
- 3 tbsp coconut oil, melted
- 3 tbsp maple syrup
- ¼ cup almond or peanut butter
- ½ cup Nothing Else™ Faba Bean Protein Isolate
- 1 tsp vanilla extract
- ½ cup dark chocolate
- Sea salt
Instructions
- Make the base: In a medium bowl, mix together nut butter, maple syrup, coconut oil (melted) and vanilla extract until smooth. Add in Nothing Else™ Faba Bean Protein Isolate and almond flour. Use a spoon or clean hands to mix until combined. The batter should resemble firm cookie dough.
- Press into pan: Press the mixture firmly into an 20 x 10cm pan lined with parchment paper, creating an even layer.
- Make the chocolate layer: Add ½ cup dark chocolate to a small saucepan and melt over low heat until smooth. Pour the melted chocolate over the base layer and tilt the pan to distribute the chocolate evenly. Sprinkle with sea salt.
- Chill and set: Place in the fridge and chill for 30 minutes to 1 hour, or until firm.
- Slice and serve: Remove from pan and slice into 10 bars or squares. Store covered in the fridge for up to two weeks.
