Super tasty protein pancakes
Serves: 2–3 (about 6–8 pancakes)
Ingredients
Dry
- 1 cup rolled oats (or oat flour)
- 30 g Nothing Else™ Faba Bean
- 1 tsp baking powder
- ½ tsp cinnamon (optional)
- Pinch of salt
Wet
- 1 cup unsweetened plant milk (almond, soy, or oat)
- 1 ripe banana (or ¼ cup applesauce)
- 1 tbsp maple syrup or date syrup (optional)
- 1 tsp vanilla extract
- 1 tbsp nut butter (peanut or almond) — optional but 🔥 for flavour
Instructions
- Add everything to a blender and blend until smooth and pourable. If it’s too thick, add a splash more milk.
- Rest (important!). Let the batter sit for 5 minutes so the protein and oats hydrate—this makes fluffier pancakes.
- Heat a non-stick pan over medium and lightly grease it.
- Pour ~¼ cup batter per pancake.
- Cook 2–3 minutes until bubbles form and edges set, then flip and cook another 1–2 minutes until golden.
- Stack ‘em up and enjoy while hot.
Topping Ideas
- Fresh berries + maple syrup
- Coconut yoghurt + peanut butter drizzle
- Chopped nuts + cacao nibs
- Sautéed apples or bananas with cinnamon
