Protein-packed chocolate mousse

Rich, silky, and loaded with protein. This naturally gluten-free chocolate mousse is the kind of treat you can feel good about—whether it's just for you or prepped for guests.

Serves: 4

Ingredients

  • 80 g Dark Chocolate (½ cup chopped)
  • 60 g Nothing Else™ Faba Bean Protein Isolate
  • 2 tbsp cacao
  • 2 tbsp maple syrup
  • 1/3 cup milk or water
  • 4 egg whites

Instructions

  • Break the dark chocolate into pieces and melt it gently using a double boiler or in the microwave in 30-second bursts, stirring in between, until smooth. Set aside to cool slightly.
  • In a mixing bowl, whisk together the Nothing Else™ Faba Bean Protein Isolate and milk (or water) until smooth and lump-free. It should form a thick, glossy mixture.
  • Once the chocolate has cooled slightly, stir it into the protein mixture until fully combined.
  • In a clean, dry bowl, whip the egg whites to stiff peaks using an electric whisk or stand mixer.
  • Gently fold the whipped egg whites into the chocolate mixture in batches. Be careful not to deflate them—you want to keep the mousse light and airy.
  • Divide the mousse into 4 serving jars and refrigerate for at least 1 hour, or until set.
